Jim grew some fantastic eggplants this season. I absolutely love the color of eggplant- and there's an awesome Eggplant Parmesan recipe to be found here. Best I've ever had- and that was no fluke. Best I've ever had both times I made it.
And so now we'll look forward to it every summer.
