One sixteenth of a 9x9 has as many grams of sugar as a soda.
But you won't be thinking about that. Will you.
When it's cooking, it smells so amazing! Yes, amazing for the 4th x. I used 1/2 cinnamon and 1/2 pie spice for the spices, just so you know.
Make a double batch and pre-cut and freeze it for a season-full of P Spice, baby.

If you glance at the recipe, you see you only need 3/4 C of pureed gourd. Double it and you need 1 1/2 C. But there's still so much left! And you KNOW I don't want to waste that good stuff!
With the remaining pumpkin in my 15 oz can, I placed about 1/3 C in these bags, for the freezer. Why, you ask???
For pumpkin spice pancakes, of course! A fall staple here for years!

Pumpkin Pancakes, ala Martha's Good Things a forever ago.
(I christened them Pumcakes, btw. Go ahead and use my name as long as you say something nice about me every time you do... jk. Well, you don't have to say anything nice, but please don't say anything plain mean.)
Pumcakes
Whisk together
1 1/4 C Flour
2 T sugar
2t baking powder
1/2 t each of cinnamon, ginger and salt
1/8 t nutmeg
pinch cloves
In a separate bowl mix together
1 C Milk
2 T Melted butter
Heaping 1/3 C Pumpkin Puree
1 egg
Fold this into the dry ingredients
Melt some butter in your skillet and use 1/4 C batter for each pumcake

Pumpkin fudge...?? I'm iffy on that one. I'm not feeling so brave today (though I did take Judah to storytime - THAT took some courage!) perhaps tomorrow it will sound better :)

Hi Megan - you don't know me but I am a friend of Kelly J's here in MN. We went through the med secretary training together. I found your blog when she shared your recipe for the yummy-looking pasta thing a few months ago or so. Just wanted to say that I LOVE reading your blog. You have a beautiful family and always have helpful/entertaining/insightful posts. Plus you're a fellow South Dakotan, so that is also cool ;) (I was born and raised in RC, parents still live there, have a few friends/relatives in SF). I wanted to comment on this post because I made the Pumcakes the other day (and also said something nice about you! ;) They were sooo yummy!! Thanks for sharing! I now have an actual homemade pancake recipe that isn't just plain 'ol cakes. I'm planning on trying the pasta recipe soon - it's getting to be casserole weather around here! Thanks again!
